Flan with mortadella mousse

Ingredients
4 potatoes, 50ml milk, 2 tablespoons of liquid dairy cream, 2 slices of mortadella (approx. 200g), 100g parmesan cheese, 100g Ricotta cheese, slices of home-made bread, extra virgin olive oil, salt, pepper.
Method
Peel the potatoes, cut into thin slices and then boil them in salted water for 2 minutes. Dry them with a tablecloth. Mash them using a potato masher. Put the mashed potatoes in a bowl and let them cool. Add the eggs and parmesan cheese and mix until creamy. Add salt, pepper and milk continuing to mix well. Pour the mixture into the baking tins. Cook in a preheated oven at 180 for about 10-15 minutes. Put aside and cool.
Cut the mortadella into cubes and put them in a blender, add ricotta cheese and cream. Blend until obtaining a homogeneous and smooth mousse. Once cool, put inside a pastry bag.
Remove the flan from the molds, and place on serving dishes. Add the mortadella mousse using a pastry bag. Decorate with thin slices of toasted home-made bread. Salt and decorate with a trickle of oil. Bon appetite!
