La Blu in its natural rind

A novelty that respects tradition. Produced in accordance with the regulations of the Consorzio Mortadella Bologna PGI, it can therefore boast the Protected Geographical Indication mark.

The natural rind serves an important protective function while allowing the mixture to "breathe" for slow and gentle cooking. Unlike a traditional casing, cooking in natural rind gives a superior roundness of flavor and enhances the taste, producing a delicious mixture.

The recipe calls for a larger amount of lean meat cuts, which allows for a velvety and soft mixture at the end of cooking.

PRE-SLICED PRODUCT
Cut it into very thin slices: this way all the aromas and scents of this unique product will be released.
Taste it at room temperature: it is recommended to leave the slices out of the fridge for about 20 minutes to enhance its intense flavor.

WHOLE PRODUCT
Let the product breathe for 30 minutes before displaying it: vacuum packaging halts the pigmentation of the rind, which is why it is recommended to remove the product from the bag 30 minutes before placing it on the counter. This way, the rind will take on its typical amber color.
Remove the rind only at the time of slicing: carefully trim the rind as you slice the mortadella; it will peel off very easily while preserving all the flavor and aroma of the product.

Store at a temperature between 0°C and 5°C.

Drizzle with a few drops of balsamic vinegar to fully enhance its irresistible flavor.
