Stuffed Aubergines with Mortadella

Ingredients for 2 aubergines (4 people)

2 eggplants

50 gr. of mortadella, cutted into cubes Felsineo

2 anchovy fillets in oil

4 tablespoons extra virgin olive oil

1 clove garlic, minced

a hint of chili

100 gr. Emmenthal

crumb of bread soaked in milk

1 egg
