While remaining ever faithful to a recipe from Bologna's ancient culinary tradition, Felsineo combines the traditional features of this much-loved pork sausage with the latest developments in modern production technology.
Felsineo uses only prize cuts of pork and natural aromas. In our mortadellas there are no added polyphosphates, caseinates, glutamates, fat and/or rind emulsions, artificial aromas, sugar or powdered milk. Felsineo mortadella does not contain any sources of gluten. In keeping with our aim to safeguard consumers, at Felsineo we have also decided not to use genetically modified organisms (GMO's) as ingredients.
A successful mixture of technological innovation and tradition has always stimulated Felsineo’s Research Centre to improve the product, in order to obtain mortadella which is healthy, genuine and easy to digest – a modern product in line with current food norms, that retains the traditional smell and taste of mortadella.
With this exact intent, i.e. to meet our consumers' requirements, the original recipe has been developed over time and the fat content of the product gradually reduced.
All this has only improved the nutritional value of the product even more. Indeed, 100g of mortadella contains less calories than a plate of pasta and contains only 60/70 mg of cholesterol, just like prime white meat considered light and dietary.
